Haldane’s wanted to grow, but every new shop had lost money in its first year, and the owners could not tell which part of the model was failing.

What we did

We built a model of one shop: rent, hours, bake volume and footfall. It showed the problem was baking in every shop. Baking moved to one central bakehouse, and new shops opened smaller and closer to stations.
